Ingredients

  • 6 large eggs
  • 3 medium potatoes
  • 6 slices bacon
  • 1 medium onion
  • 1 medium green bell pepper
  • 1 cup, shredded cheddar cheese
  • 2 tablespoons butter
  • 0.5 teaspoon salt
  • 0.25 teaspoon black pepper
  • 2 tablespoons, chopped fresh parsley

Directions

Step 1

Peel and dice the potatoes into small, evenly-sized cubes. Dice the onion and green bell pepper, and set them aside.

Step 2

Cut the bacon into bite-sized pieces and shred the cheddar cheese. Chop the parsley for garnish.

Step 3

In a large skillet, cook the bacon over medium heat until crispy. Transfer the cooked bacon to a plate lined with paper towels, leaving the bacon grease in the skillet.

Step 4

Add the diced potatoes to the skillet with the bacon grease. Cook over medium heat for 10-12 minutes, stirring occasionally, until the potatoes are golden brown and tender.

Push the potatoes to one side of the skillet and melt the butter on the empty side. Add the diced onion and green bell pepper to the buttered side, sautéing for 3-4 minutes until softened.
