Ingredients

  • 400 g farfalle pasta
  • 2 tbsp olive oil
  • 300 g Italian sausage (casings removed)
  • 3 count garlic cloves, minced
  • 250 g cherry tomatoes, halved
  • 2 tbsp tomato paste
  • 200 ml heavy cream
  • 50 g Parmesan cheese, grated
  • 10 g fresh basil leaves, chopped
  • 1 to taste salt
  • 1 to taste black pepper

Directions

Step 1

In a large pot, bring salted water to a boil. Cook the farfalle pasta according to the package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta cooks, heat the olive oil in a large skillet over medium heat.

Step 3

Add the Italian sausage to the skillet and break it up with a wooden spoon. Cook for 5–7 minutes or until browned and cooked through.

Step 4

Add the minced garlic to the skillet and sauté for 1 minute until fragrant.

Step 5

Stir in the cherry tomatoes and cook for 3–4 minutes, allowing them to soften and release their juices.

Step 6

Add the tomato paste to the skillet and mix well to coat the sausage and tomatoes.

Step 7

Slowly pour in the heavy cream, stirring to combine. Let the sauce simmer gently for 2–3 minutes until thickened.

Step 8

Add the cooked pasta to the skillet and toss to combine with the sauce. If the sauce is too thick, stir in some of the reserved pasta water, a little at a time, until the desired consistency is reached.

Step 9

Stir in grated Parmesan cheese and chopped basil. Season with salt and black pepper to taste.

Step 10

Serve immediately, garnished with additional Parmesan and basil if desired.
