Ingredients

  • 12 oz farfalle (bow-tie pasta)
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 3 garlic cloves, minced
  • 8 oz baby bella mushrooms, sliced
  • 1 cup heavy cream
  • 4 oz Gorgonzola cheese, crumbled
  • 1 cup Parmesan cheese, grated
  • 2 tbsp fresh parsley, chopped (optional, for garnish)
  • 0 to taste salt
  • 0 to taste black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Add the farfalle pasta and cook according to the package instructions until al dente. Reserve 1/2 cup of pasta water before draining the pasta. Set aside.

Step 2

In a large skillet over medium heat, heat the olive oil and melt the butter together.

Step 3

Add the minced garlic to the skillet and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 4

Add the sliced mushrooms to the skillet and cook for 5-7 minutes, stirring occasionally, until the mushrooms have softened and released their moisture. Season with a pinch of salt and black pepper.

Step 5

Pour the heavy cream into the skillet and stir to combine. Bring the mixture to a gentle simmer.

Step 6

Add the crumbled Gorgonzola cheese and grated Parmesan cheese to the skillet, stirring continuously until the cheeses have melted and the sauce has thickened, about 3-4 minutes. Taste the sauce and adjust seasoning with additional salt and pepper as needed.

Step 7

Add the cooked farfalle to the skillet and toss to coat the pasta evenly in the sauce. If the sauce is too thick, add a splash of the reserved pasta water to reach your desired consistency.

Step 8

Remove the skillet from heat and transfer the pasta to serving plates or a large platter.

Step 9

Garnish with chopped fresh parsley, if desired, and serve immediately.
