Ingredients

  • 400 g farfalle pasta
  • 300 g broccoli florets
  • 3 tbsp olive oil
  • 3 garlic cloves
  • 0.5 tsp red pepper flakes
  • 1 zest of one lemon
  • 2 tbsp lemon juice
  • 50 g grated Parmesan cheese
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 120 ml pasta water
  • 2 tbsp fresh parsley (optional, for garnish)

Directions

Step 1

Bring a large pot of salted water to a boil. Add the farfalle pasta and cook until al dente, following the package instructions (about 10 minutes). Reserve 120ml (1/2 cup) of the pasta cooking water before draining.

Step 2

While the pasta cooks, heat 2 tablespoons of olive oil in a large skillet over medium heat.

Step 3

Add the broccoli florets to the skillet and sauté for 5-7 minutes, stirring occasionally, until they become tender and slightly charred.

Step 4

Add the minced garlic and red pepper flakes to the skillet, cooking for another 1-2 minutes until fragrant. Be careful not to burn the garlic.

Step 5

Lower the heat and add the reserved pasta water to the broccoli mixture, stirring to combine. Let it simmer for 2 minutes, allowing the flavors to meld.

Step 6

Add the cooked farfalle pasta to the skillet with the broccoli and toss to coat evenly.

Stir in the lemon zest, lemon juice, and remaining tablespoon of olive oil. Season with salt and black pepper to taste.
