Ingredients

  • 12 oz farfalle (bow tie) pasta
  • 6 oz smoked salmon
  • 1 lb asparagus spears
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 2 cloves garlic clove
  • 1 cup heavy cream
  • 2 tbsp lemon juice
  • 1 tsp lemon zest
  • 1 cup Parmesan cheese, grated
  • 1 tsp salt
  • 0.5 tsp black pepper, freshly ground
  • 2 tbsp fresh parsley, chopped
  • 4 qt water

Directions

Step 1

Bring 4 quarts of salted water to a boil in a large pot. Cook the farfalle pasta according to the package instructions until al dente. Reserve 1 cup of pasta water, then drain the pasta and set aside.

Step 2

While the pasta is cooking, trim the tough ends off the asparagus. Cut the asparagus spears into 1-inch pieces.

Step 3

Heat a large skillet over medium heat. Add 2 tablespoons of olive oil and 2 tablespoons of unsalted butter. Once the butter has melted, add the minced garlic and sauté for 1 minute, until fragrant.

Add the asparagus pieces to the skillet and cook for 3-4 minutes, stirring occasionally, until they are tender-crisp and bright green. Remove the asparagus from the skillet and set them aside.
