Ingredients

  • 450 grams Cremini or button mushrooms
  • 3 tablespoons Unsalted butter
  • 1 tablespoon Olive oil
  • 3 cloves Garlic cloves
  • 2 tablespoons Fresh parsley
  • 50 grams Parmesan cheese
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper

Directions

Step 1

Clean the mushrooms by wiping them gently with a damp paper towel or soft brush to remove dirt. Slice them into even-sized pieces, about 1/4 inch thick if large, or leave them whole if they are small.

Step 2

Finely mince the garlic cloves and roughly chop the fresh parsley. Grate the Parmesan cheese and set aside.

Step 3

In a large skillet, heat the olive oil and 1 tablespoon of butter over medium-high heat. Once the butter has melted and the oil is hot, add the mushrooms in a single layer, making sure not to overcrowd the pan.

Step 4

Cook the mushrooms without stirring for about 3-4 minutes to allow them to brown on one side. Stir the mushrooms and cook for an additional 2-3 minutes until they are golden brown and tender.

Step 5

Reduce the heat to medium and add the remaining 2 tablespoons of butter and the minced garlic to the skillet. Stir to coat the mushrooms evenly in the garlic butter and cook for 1-2 minutes, being careful not to let the garlic burn.

Step 6

Season the mushrooms with salt and black pepper. Toss to combine.

Step 7

Remove the skillet from the heat and stir in the chopped parsley. Transfer the mushrooms to a serving dish and sprinkle the grated Parmesan cheese over the top.

Step 8

Serve immediately as a side dish, or enjoy as is for a delicious appetizer.
