Ingredients

  • 0.75 cups Granulated sugar
  • 0.25 cups Cornstarch
  • 2.5 cups Whole milk
  • 4 whole Egg yolks
  • 2 tablespoons Unsalted butter
  • 2 teaspoons Vanilla extract
  • 1 cups Whipped cream (optional, for topping)
  • 1 whole Pre-baked pie crust (if making pie)
  • 2 whole Sliced bananas (for layering, optional)

Directions

Step 1

In a medium saucepan, whisk together granulated sugar and cornstarch until no lumps remain.

Step 2

Gradually add whole milk, whisking constantly, to create a smooth mixture.

Step 3

In a small bowl, lightly whisk egg yolks. Slowly pour about 1/2 cup of the milk mixture into the yolks, whisking constantly, to temper the eggs.

Step 4

Pour the tempered egg mixture back into the saucepan with the remaining milk mixture.

Step 5

Cook over medium heat, stirring continuously, until the mixture thickens and starts to bubble (about 6–8 minutes).

Once thickened, remove from heat and stir in unsalted butter and vanilla extract until fully incorporated.

Step 7

Mash 3 ripe bananas with a fork until smooth. Stir the mashed bananas into the pudding mixture.

Step 8

If making pudding, pour the banana pudding into serving bowls or ramekins, cover with plastic wrap (pressing the wrap against the surface to prevent a skin from forming), and refrigerate for at least 2 hours.

Step 9

If making pie, pour the banana pudding into a pre-baked pie crust. If desired, layer slices of banana between the pudding for extra banana flavor. Cover with plastic wrap and refrigerate for at least 3 hours.
