  • 4 medium Carrots, peeled and sliced into 1-inch pieces
  • 3 medium Potatoes, peeled and cut into 1-inch cubes
  • 2 stalks Celery stalks, sliced
  • 1 cup Frozen peas
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large bowl, combine the flour, salt, and pepper. Add the beef cubes and toss to coat evenly.

Step 2

In a large Dutch oven or heavy-bottomed pot, heat the vegetable oil over medium-high heat. In batches, brown the beef cubes on all sides, about 3-4 minutes per batch. Remove browned beef to a plate and set aside.
