Ingredients

  • 4 links Italian sausage (hot)
  • 4 Hoagie rolls
  • 1 large Green bell pepper
  • 1 large Red bell pepper
  • 1 large Yellow onion
  • 8 slices Provolone cheese
  • 2 cloves Garlic
  • 2 tablespoons Olive oil
  • 1 teaspoon Salt
  • 0.5 teaspoons Black pepper
  • 0.25 teaspoons Crushed red pepper flakes
  • 2 tablespoons Fresh parsley (optional, for garnish)

Directions

Step 1

Preheat a large skillet over medium heat. Add 1 tablespoon of olive oil.

Step 2

Add the Italian sausage links to the skillet and cook for 10-12 minutes, turning occasionally, until golden brown and cooked through. Remove from the skillet and set aside to rest.

Step 3

While the sausage is cooking, slice the green bell pepper, red bell pepper, and yellow onion into thin strips. Mince the garlic.

Step 4

In the same skillet, add the remaining 1 tablespoon of olive oil. Add the sliced peppers and onion to the skillet and sauté for 5-7 minutes until softened.

Step 5

Add the minced garlic, salt, black pepper, and crushed red pepper flakes to the peppers and onions. Stir well and cook for an additional 2 minutes.

Step 6

Slice the cooked sausage links in half lengthwise. Return them to the skillet with the peppers and onions, and stir to combine. Cook for 2-3 minutes to reheat the sausage and blend the flavors.

Step 7

Preheat your broiler to high. Slice the hoagie rolls in half lengthwise and place them on a baking sheet, cut side up.

Step 8

Place 2 slices of provolone cheese on each half of the hoagie rolls. Broil for 1-2 minutes, or until the cheese is melted and the edges of the bread are lightly toasted. Watch carefully to prevent burning.

Step 9

Remove the hoagie rolls from the broiler. Assemble the sandwiches by spooning the sausage, peppers, and onions onto the bottom half of each roll. Top with the other half of the roll.

Step 10

Optionally, sprinkle freshly chopped parsley on top for garnish. Serve hot and enjoy!
