Ingredients

  • 1.5 pounds Ground beef (80% lean, 20% fat)
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 4 ounces Gruyere cheese, sliced
  • 4 pieces Brioche buns
  • 2 tablespoons Unsalted butter
  • 1 large Yellow onion, thinly sliced
  • 1 tablespoon Olive oil
  • 0.5 cup Mayonnaise
  • 2 cloves Garlic, minced
  • 1 tablespoon Lemon juice
  • 1 cup Baby arugula
  • 1 large Tomato, sliced

Directions

Step 1

In a large bowl, gently mix the ground beef with salt and black pepper. Be careful not to over-mix to avoid tough patties.

Step 2

Divide the beef mixture into 4 equal portions and shape them into patties, about 3/4 inch thick. Make a slight indentation in the center of each patty with your thumb to prevent bulging while cooking.

Step 3

In a large skillet over medium heat, add the olive oil and sliced onions. Cook, stirring occasionally, for about 10-15 minutes until the onions are soft and caramelized. Remove from heat and set aside.

Step 4

In a small bowl, mix mayonnaise, minced garlic, and lemon juice to make the garlic aioli. Set aside.

Step 5

Heat a grill or skillet over medium-high heat. Cook the burger patties for about 4-5 minutes per side, or until they reach your desired doneness. In the final 2 minutes of cooking, place a slice of Gruyere cheese on each patty and cover the skillet or grill to melt the cheese.

Step 6

While the patties are cooking, split the brioche buns and lightly butter the cut sides. Toast the buns in a separate skillet or on the grill until golden brown.

Step 7

To assemble, spread a generous amount of garlic aioli on the bottom half of each bun. Add a handful of baby arugula, a slice of tomato, the burger patty with melted cheese, and a portion of the caramelized onions. Top with the other half of the brioche bun.

Step 8

Serve immediately and enjoy your fancy hamburgers!
