Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 0.5 cup Barbecue sauce
  • 1 teaspoon Chili powder
  • 0.5 teaspoon Smoked paprika
  • 0.5 teaspoon Ground cumin
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 4 large Flour tortillas
  • 1.5 cups Shredded cheddar cheese
  • 1.5 cups Shredded Monterey Jack cheese
  • 2 tablespoons Butter
  • 2 stalks Scallions, sliced (optional)
  • 0.5 cup Sour cream (optional)

Directions

Step 1

In a large skillet over medium-high heat, cook the ground beef until browned and fully cooked, about 7-10 minutes. Drain any excess fat.

Step 2

Add the diced onion and minced garlic to the skillet and cook for 2-3 minutes, or until the onion becomes translucent and fragrant.

Step 3

Mix in the barbecue sauce, chili powder, smoked paprika, ground cumin, salt, and black pepper. Stir well to combine and let the mixture simmer for 3-4 minutes on low heat. Remove from heat and set aside.

Step 4

Heat a large flat skillet or griddle over medium heat. Add a small amount of butter and allow it to melt, coating the surface evenly.

Step 5

Place one flour tortilla onto the skillet. Sprinkle an even layer of shredded cheddar and Monterey Jack cheese (about a quarter of each type) on one side of the tortilla.

Step 6

Spread a generous layer of the beef mixture over the cheese. Top with a bit more cheese for extra gooeyness, then fold the tortilla in half to close.

Step 7

Cook the quesadilla for 2-3 minutes on each side, or until the tortilla is golden and crispy and the cheese is thoroughly melted. Repeat with remaining tortillas, beef mixture, and cheese.

Step 8

Slice each quesadilla into wedges and garnish with sliced scallions, if desired. Serve with sour cream on the side for dipping.
