Ingredients

  • 4 tablespoons Unsalted butter
  • 8 cups Yellow onions
  • 3 tablespoons All-purpose flour
  • 8 cups Beef stock
  • 1 cup Chicken stock
  • 1 cup Dry white wine
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 1 loaf French bread or baguette
  • 2 cups Gruyère cheese, shredded

Directions

Step 1

Peel and thinly slice the yellow onions. Aim for uniform slices to ensure even cooking.

Step 2

In a large, heavy-bottomed pot or Dutch oven, melt the butter over medium heat.

Step 3

Add the sliced onions to the pot and cook, stirring frequently, until they are golden brown and caramelized. This process will take approximately 45 minutes. Be patient and adjust the heat to prevent burning.

Step 4

Once the onions are caramelized, sprinkle the flour over them and stir well to coat. Cook for an additional 2-3 minutes to toast the flour slightly.

Step 5

Gradually pour in the beef stock and chicken stock, stirring continuously to prevent lumps. Add the white wine, salt, and black pepper. Bring the mixture to a boil, then reduce the heat to low and simmer for 45 minutes to an hour.

Step 6

While the soup simmers, preheat the oven to 400°F (200°C). Slice the baguette into 1-inch thick pieces and place them on a baking sheet. Toast the bread in the oven for 5-7 minutes, flipping halfway through, until lightly golden.

Step 7

Preheat your broiler. Ladle the hot soup into ovenproof bowls or crocks, leaving some space at the top for the bread. Place a slice of toasted baguette on top of each bowl and generously sprinkle shredded Gruyère cheese over the bread.

Step 8

Place the soup bowls under the broiler for 2-3 minutes, or until the cheese is melted, bubbly, and lightly browned. Keep a close eye to prevent burning.

Step 9

Carefully remove the bowls from the broiler and serve the soup immediately. Enjoy!
