Ingredients

  • 0.75 cup Unsalted butter, softened
  • 0.5 cup Granulated sugar
  • 0.75 cup Brown sugar, packed
  • 2 pieces Large eggs
  • 2 teaspoons Pure vanilla extract
  • 1.75 cups All-purpose flour
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 2 cups Old-fashioned rolled oats
  • 0.75 cup Shredded sweetened coconut
  • 0.5 cup Pecans, chopped

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, using a hand mixer or stand mixer on medium speed.

Step 3

Add the eggs one at a time, beating well after each addition. Mix in the vanilla extract until combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, cinnamon, and salt. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined.

Step 5

Stir in the rolled oats, shredded coconut, and chopped pecans using a rubber spatula or wooden spoon until evenly incorporated.

Step 6

Using a cookie scoop or tablespoon, drop rounded tablespoons of cookie dough onto the prepared baking sheets, spacing them about 2 inches apart.

Step 7

Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden and the centers look slightly underbaked. Avoid overbaking for soft, chewy cookies.

Step 8

Remove the cookies from the oven and let them cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 9

Store the cookies in an airtight container at room temperature for up to one week, or freeze for longer storage.
