Ingredients

  • 12 oz Spaghetti
  • 1 lb Chicken breast
  • 3 tbsp Olive oil
  • 4 Garlic cloves, minced
  • 1 tbsp Lemon zest
  • 0.25 cup Fresh lemon juice
  • 1 cup Chicken broth
  • 0.5 cup Heavy cream
  • 0.5 cup Parmesan cheese, grated
  • 1 tsp Salt
  • 0.5 tsp Black pepper
  • 2 tbsp Fresh parsley, chopped
  • 0.25 tsp Crushed red pepper flakes (optional)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the spaghetti according to package instructions until al dente. Reserve 1/2 cup of pasta water, then drain the spaghetti and set aside.

Step 2

While the pasta cooks, season the chicken breasts with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

Step 3

Heat 2 tablespoons of olive oil in a large skillet over medium heat. Add the chicken breasts and cook for 4-5 minutes per side, or until golden brown and fully cooked. Remove the chicken from the skillet, let it rest, then slice it thinly.

In the same skillet, lower the heat to medium and add the remaining 1 tablespoon of olive oil. Sauté the minced garlic for 30 seconds, or until fragrant (do not let it burn).
