Ingredients

  • 3 lbs Chuck roast
  • 2 tsp Salt
  • 1 tsp Black pepper
  • 2 tbsp Olive oil
  • 1 large Yellow onion
  • 3 cloves Garlic cloves
  • 4 large Carrots
  • 4 medium Russet potatoes
  • 2 cups Beef broth
  • 2 tbsp Worcestershire sauce
  • 1 tsp Dried thyme
  • 1 leaf Bay leaf

Directions

Step 1

Season the chuck roast generously with salt and black pepper on all sides.

Step 2

Heat olive oil in a large skillet over medium-high heat. Sear the chuck roast for 4-5 minutes per side until a golden-brown crust forms.

Step 3

Transfer the seared roast to the crock pot.

Step 4

Peel and chop the onion into wedges. Peel and mince the garlic cloves. Add both to the crock pot around the roast.

Peel and slice the carrots into large chunks. Wash and quarter the potatoes. Add them to the crock pot.
