  • 3 pounds beef chuck roast
  • 2 teaspoons salt
  • 1 teaspoon black pepper
  • 0.25 cup flour
  • 2 tablespoons olive oil
  • 1 large yellow onion
  • 4 whole garlic cloves
  • 4 large carrots
  • 6 medium Yukon gold potatoes
  • 3 cups beef broth
  • 2 tablespoons tomato paste
  • 2 tablespoons Worcestershire sauce
  • 3 whole fresh thyme sprigs
  • 2 whole bay leaves

Directions

Step 1

Preheat your oven to 300°F (150°C).

Step 2

Pat the beef chuck roast dry with paper towels and season both sides with 2 teaspoons of salt and 1 teaspoon of black pepper.

Lightly coat the roast in flour, shaking off the excess.

Step 4

In a large Dutch oven, heat 2 tablespoons of olive oil over medium-high heat. Sear the roast on all sides until deeply browned, about 3-4 minutes per side. Remove the roast and set it aside.
