Ingredients

  • 1 cup All-purpose flour
  • 2 cups Rolled oats
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.5 teaspoon Ground nutmeg
  • 0.25 teaspoon Salt
  • 0.75 cup Unsalted butter
  • 0.75 cup Brown sugar
  • 0.25 cup Granulated sugar
  • 2 Eggs
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Maple syrup
  • 1 cup Raisins
  • 0.5 cup Chopped walnuts (optional)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.

Step 2

In a medium bowl, whisk together the all-purpose flour, rolled oats, baking soda, ground cinnamon, ground nutmeg, and salt. Set aside.

Step 3

In a large mixing bowl, cream together the unsalted butter, brown sugar, and granulated sugar until light and fluffy, about 3 minutes.

Step 4

Beat in the eggs, one at a time, followed by the vanilla extract and maple syrup, until well combined.

Step 5

Gradually mix the dry ingredients into the wet ingredients until just combined. Do not overmix.

Step 6

Fold in the raisins and chopped walnuts (if using) to evenly distribute them throughout the dough.

Step 7

Using a tablespoon or cookie scoop, drop rounded spoonfuls of the dough onto the prepared baking sheet, spacing them about 2 inches apart.

Step 8

Bake in the preheated oven for 10-12 minutes, or until the edges are golden brown and the centers are slightly soft.

Step 9

Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Serve warm or store in an airtight container at room temperature for up to 5 days.
