Ingredients

  • 8 ounces Whole wheat elbow macaroni
  • 3 cups Cauliflower florets
  • 1.5 cups Low-sodium vegetable broth
  • 1.5 cups Reduced-fat shredded sharp cheddar cheese
  • 0.5 cup Plain Greek yogurt
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 0.5 teaspoon Paprika
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 0.5 cup Panko breadcrumbs (optional, for topping)
  • 1 teaspoon Olive oil (optional, for breadcrumbs)

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the whole wheat elbow macaroni according to package instructions until al dente. Drain and set aside.

Step 2

In a medium saucepan, combine cauliflower florets and vegetable broth. Bring to a boil over medium-high heat, then reduce to a simmer. Cover and cook for about 10 minutes, or until the cauliflower is very tender.

Step 3

Using an immersion blender or a regular blender, carefully blend the cauliflower and vegetable broth until smooth and creamy. (If using a regular blender, blend in batches and be cautious of the steam.)
