  • 0.25 teaspoon Black pepper
  • 1 large (sliced) Red bell pepper
  • 1 large (sliced) Green bell pepper
  • 1 medium (sliced) Yellow onion
  • 4 cups (chopped) Romaine lettuce
  • 1 cup (halved) Cherry tomatoes
  • 1 large (sliced) Avocado
  • 0.5 cup (chopped) Fresh cilantro
  • 3 tablespoons Lime juice
  • 0.25 cup Sour cream or Greek yogurt
  • 1 teaspoon Honey
  • 1 small (minced) Garlic clove

Directions

Step 1

In a small bowl, mix the chili powder, ground cumin, paprika, garlic powder, salt, and black pepper.

Rub the spice mixture evenly over both sides of the chicken breasts.

Heat 1 tablespoon of olive oil in a large skillet over medium heat. Cook the chicken breasts for 6-7 minutes per side, or until fully cooked and the internal temperature reaches 165°F (74°C). Remove the chicken from the skillet and let it rest for 5 minutes before slicing it thinly.
