Ingredients

  • 1 pound ground beef (or turkey for a lighter option)
  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 medium green bell pepper, diced
  • 1 medium red bell pepper, diced
  • 28 ounces diced tomatoes (canned, with juice)
  • 2 tablespoons tomato paste
  • 1 cup beef broth (or chicken broth)
  • 15 ounces kidney beans (canned, rinsed and drained)
  • 15 ounces black beans (canned, rinsed and drained)
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional, for extra heat)
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 0 optional sour cream (for serving)
  • 0 optional shredded cheese (for serving)
  • 0 optional chopped cilantro (for garnish)

Directions

Step 1

Heat the olive oil in a large pot or Dutch oven over medium heat.

Step 2

Add the diced onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for 1 minute until fragrant.

Step 3

Add the ground beef (or turkey) to the pot, breaking it into smaller pieces with a wooden spoon. Cook until browned, about 5-7 minutes. Drain any excess fat, if needed.

Step 4

Stir in the diced green and red bell peppers. Cook for an additional 3-4 minutes to slightly soften the peppers.

Step 5

Add the chili powder, ground cumin, paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Stir thoroughly to coat the beef and vegetables in the spices.

Step 6

Stir in the tomato paste and cook for 1 minute before adding the canned diced tomatoes (with juice) and beef broth. Bring the mixture to a simmer.

Step 7

Reduce the heat to low and cover the pot. Let the chili simmer gently for 20 minutes, stirring occasionally.

Step 8

Stir in the kidney beans and black beans, and simmer uncovered for an additional 10-15 minutes, allowing the flavors to meld and the chili to thicken to your desired consistency.

Step 9

Taste and adjust the seasoning, adding more salt or spices as needed.

Step 10

Serve hot in bowls. Top with optional garnishes like sour cream, shredded cheese, and chopped cilantro, if desired. Enjoy!
