Ingredients

  • 1 cup basmati rice
  • 2 cups water
  • 2 tablespoons butter
  • 1 medium yellow onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1.5 tablespoons curry powder
  • 0.5 teaspoon ground turmeric
  • 0.5 teaspoon ground cumin
  • 1 medium carrot, diced
  • 0.5 cup frozen peas
  • 1 cup coconut milk
  • 0.5 cup vegetable broth
  • 0.5 teaspoon salt
  • 2 tablespoons fresh cilantro, chopped (optional for garnish)

Directions

Step 1

Rinse the basmati rice under cold water until the water runs clear to remove excess starch. Set aside.

Step 2

In a medium-sized pot, bring the 2 cups of water to a boil. Add the rinsed rice, reduce to a simmer, cover, and cook for about 12-15 minutes, or until the water is absorbed and the rice is tender. Remove from heat and keep covered.

Step 3

While the rice is cooking, heat the butter in a large skillet or pan over medium heat. Add the chopped onion and cook, stirring occasionally, until soft and translucent, about 3-4 minutes.

Step 4

Add the minced garlic and grated ginger to the onion. Sauté for another minute until fragrant.

Step 5

Stir in the curry powder, turmeric, and cumin. Cook the spices with the onions for 1-2 minutes to release their flavors.

Step 6

Add the diced carrot to the skillet and cook for 3-4 minutes, stirring occasionally, until slightly softened.

Step 7

Pour in the coconut milk and vegetable broth. Stir to combine, then bring to a gentle simmer.

Step 8

Add the frozen peas to the skillet and season with salt. Stir well and let the mixture simmer for 5 minutes until the vegetables are tender and the sauce has thickened slightly.

Step 9

Fluff the cooked rice with a fork and gently fold it into the curry mixture until the rice is evenly coated with the sauce.

Step 10

Taste and adjust seasoning, if needed. Remove from heat and garnish with fresh cilantro, if desired.

Step 11

Serve warm as a standalone dish or alongside your favorite protein or vegetable sides. Enjoy the magic!
