Ingredients

  • 1 pound ground beef
  • 1 small onion, diced
  • 2 cloves minced garlic
  • 2 tablespoons taco seasoning
  • 1 cup refried beans
  • 4 large flour tortillas
  • 2 cups shredded cheddar cheese
  • 2 cups enchilada sauce
  • 0.5 cup sour cream
  • 0.25 cup chopped fresh cilantro
  • 0.5 cup diced tomatoes
  • 1 cup shredded lettuce

Directions

Step 1

In a large skillet, cook the ground beef over medium heat until browned, about 6-8 minutes. Drain any excess fat.

Step 2

Add the diced onion and minced garlic to the skillet with the ground beef and cook for an additional 3 minutes, stirring frequently.

Step 3

Stir in the taco seasoning and 2 tablespoons of water. Mix well to coat the beef evenly with the seasoning. Remove from heat.

Step 4

Preheat your oven to 375°F (190°C).

Step 5

Lay each flour tortilla flat on a clean surface. Spread 1/4 cup of refried beans down the center of the tortilla, followed by 1/4 of the seasoned beef mixture.

Step 6

Sprinkle a small handful of shredded cheddar cheese over the filling in each tortilla. Roll the tortilla tightly, tucking in the sides as you go to form a burrito.

Step 7

Place the burritos seam-side down in a 9x13-inch baking dish.

Step 8

Pour the enchilada sauce evenly over the burritos, making sure they are completely covered.

Step 9

Sprinkle the remaining shredded cheddar cheese on top of the burritos.

Step 10

Bake in the preheated oven for 15-20 minutes, or until the cheese is melted and bubbly.

Step 11

Remove the baking dish from the oven and let the burritos cool for a couple of minutes.

Step 12

Garnish the wet burritos with sour cream, cilantro, diced tomatoes, and shredded lettuce as desired. Serve warm and enjoy!
