Ingredients

  • 16 large Button mushrooms
  • 120 g Cream cheese
  • 2 minced Garlic cloves
  • 50 g Parmesan cheese
  • 40 g Breadcrumbs
  • 2 tbsp chopped Fresh parsley
  • 2 tbsp Olive oil
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease it.

Step 2

Wipe the mushrooms clean with a damp cloth. Carefully remove the stems and save them for the filling.

Step 3

Finely chop the mushroom stems and set them aside.

Step 4

In a medium skillet, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and chopped mushroom stems, cooking for 5-7 minutes until softened and fragrant. Remove from heat and let cool slightly.

Step 5

In a mixing bowl, combine the softened mushroom mixture, cream cheese, Parmesan cheese, breadcrumbs, parsley, salt, and black pepper. Mix until well incorporated.

Drizzle the remaining 1 tablespoon of olive oil over the mushroom caps and toss gently to coat.
