Ingredients

  • 2 pounds russet potatoes
  • 4 tablespoons unsalted butter
  • 4 large garlic cloves
  • 4 cups baby spinach
  • 0.5 cups heavy cream
  • 0.5 cups milk
  • 0.75 cups Parmesan cheese
  • 1 teaspoons salt
  • 0.5 teaspoons black pepper
  • 1 tablespoons olive oil

Directions

Step 1

Peel and chop the potatoes into evenly sized chunks. Place them in a large pot and cover with cold water. Add a pinch of salt to the water.

Step 2

Bring the pot of water to a boil over medium-high heat. Reduce heat to a simmer and cook the potatoes until they are fork-tender, about 15-20 minutes.

While the potatoes are cooking, heat olive oil in a large skillet over medium heat. Add the garlic cloves (minced) and sauté for 1-2 minutes until fragrant but not browned.
