Ingredients

  • 1 pound Ground beef
  • 1 medium Yellow onion, diced
  • 2 cloves Garlic, minced
  • 1 10.5-ounce can Canned cream of mushroom soup
  • 2 cups Frozen mixed vegetables
  • 1.5 cups Shredded cheddar cheese
  • 0.5 cup Milk
  • 3 cups Egg noodles
  • 0.5 teaspoon Salt
  • 0.25 teaspoon Black pepper
  • 1 tablespoon Olive oil
  • 0.5 cup Breadcrumbs (optional, for topping)
  • 2 tablespoons Butter (optional, for topping)

Directions

Step 1

Preheat your oven to 375°F (190°C).

Step 2

Cook the egg noodles according to the package instructions until al dente. Drain and set aside.

Step 3

In a large skillet, heat olive oil over medium heat. Add the diced onion and garlic, and sauté until softened, about 2-3 minutes.

Step 4

Add the ground beef to the skillet. Cook and crumble it until browned and fully cooked, about 6-8 minutes. Drain any excess fat.

Step 5

Stir in the cream of mushroom soup, milk, salt, and black pepper. Let the mixture simmer for 2-3 minutes, stirring occasionally.

Step 6

Add the frozen mixed vegetables and 1 cup of shredded cheddar cheese to the skillet. Stir to combine and heat through for another 2 minutes.

Step 7

In a large mixing bowl, combine the cooked egg noodles and the beef and vegetable mixture. Toss until everything is evenly coated.

Step 8

Transfer the mixture to a greased 9x13-inch casserole dish.

Step 9

Sprinkle the remaining 0.5 cup of shredded cheddar cheese evenly over the top.

Step 10

If using breadcrumbs: In a small bowl, mix the breadcrumbs with melted butter and sprinkle this mixture on top of the cheese.

Step 11

Bake the casserole in the preheated oven for 20 minutes, or until the top is bubbly and golden brown.

Step 12

Remove from the oven and let it rest for 5 minutes before serving. Enjoy your Ez Casserole!
