Ingredients

  • 1 cup Zucchini, shredded
  • 1 cup Carrots, shredded
  • 1 cup Rolled oats
  • 0.5 cup Whole wheat flour
  • 0.5 cup Almond flour
  • 0.5 cup Dried cranberries
  • 2 tablespoons Chia seeds
  • 1 teaspoon Cinnamon, ground
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 1 large Egg
  • 0.5 cup Maple syrup
  • 0.5 cup Unsweetened applesauce
  • 1 teaspoon Vanilla extract

Directions

Step 1

Preheat your oven to 350°F (175°C). Line a 9x9-inch baking pan with parchment paper or lightly grease it with cooking spray.

Step 2

In a large bowl, combine the shredded zucchini and shredded carrots. Pat them dry with a paper towel to remove excess moisture.

Step 3

Add the rolled oats, whole wheat flour, almond flour, dried cranberries, chia seeds, cinnamon, baking powder, and salt to the bowl with the zucchini and carrots. Stir to combine.

Step 4

In a separate medium-sized bowl, whisk together the egg, maple syrup, unsweetened applesauce, and vanilla extract until smooth.

Step 5

Pour the wet ingredients into the dry ingredients and mix well until a thick, cohesive batter forms.

Step 6

Transfer the batter to the prepared pan, spreading it evenly with a spatula.

Step 7

Bake in the preheated oven for 25-30 minutes or until the bars are golden brown around the edges and a toothpick inserted into the center comes out clean.

Step 8

Allow the bars to cool completely in the pan before cutting them into 12 squares or bars.

Step 9

Store the bars in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
