Ingredients

  • 450 g red kidney beans
  • 400 g smoked sausage (andouille or kielbasa)
  • 1 tbsp olive oil
  • 1 medium yellow onion, diced
  • 1 medium green bell pepper, diced
  • 2 stalks celery stalks, diced
  • 4 cloves garlic cloves, minced
  • 2 bay leaves
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp Cajun or Creole seasoning
  • 1200 ml chicken broth
  • 600 g cooked white rice
  • 3 stalks green onions, sliced (for garnish)
  • 1 tsp salt
  • 0.5 tsp black pepper

Directions

Step 1

Rinse the red kidney beans and soak them overnight in water. Drain and set aside.

Step 2

Heat the olive oil in a large pot or Dutch oven over medium heat.

Slice the smoked sausage into 1/2-inch rounds and cook in the pot until browned on both sides, about 5 minutes. Remove the sausage and set aside.

To the same pot, add the diced onion, green bell pepper, and celery. Sauté for 5-7 minutes, stirring occasionally, until softened.
