Ingredients

  • 2 cups Wheat bran
  • 1 cup Whole wheat flour
  • 0.5 cup Brown sugar (lightly packed)
  • 1 teaspoon Baking powder
  • 1 teaspoon Baking soda
  • 1 teaspoon Ground cinnamon
  • 0.25 teaspoon Salt
  • 0.75 cup Unsweetened applesauce
  • 1.5 cups Low-fat buttermilk
  • 1 teaspoon Vanilla extract
  • 2 large Egg whites
  • 0.5 cup Raisins (optional)
  • 1 as needed Non-stick cooking spray

Directions

Step 1

Preheat your oven to 350°F (175°C) and prepare a 9x9-inch baking pan by spraying it lightly with non-stick cooking spray.

Step 2

In a large mixing bowl, combine the wheat bran, whole wheat flour, brown sugar, baking powder, baking soda, cinnamon, and salt. Stir well to distribute the ingredients evenly.

Step 3

In a separate medium-sized bowl, whisk together the unsweetened applesauce, low-fat buttermilk, vanilla extract, and egg whites until the mixture is smooth.

Step 4

Pour the wet ingredients into the bowl with the dry ingredients and stir gently until just combined (do not overmix to avoid dense squares).

Step 5

If using raisins, fold them into the batter evenly at this stage.

Step 6

Transfer the batter to the prepared baking pan, spreading it out evenly with a spatula.

Step 7

Bake in the preheated oven for 22-25 minutes, or until a toothpick inserted in the center comes out clean.

Step 8

Remove from the oven and allow the squares to cool in the pan for 5-10 minutes before transferring to a wire rack to cool completely.

Step 9

Once cool, slice into 12 equal-sized squares and serve. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for longer freshness.
