Ingredients

  • 200 grams dark chocolate (minimum 70% cocoa)
  • 50 grams unsalted butter
  • 3 large eggs (separated)
  • 50 grams granulated sugar
  • 250 ml heavy cream
  • 60 ml Kahlua coffee liqueur
  • 1 teaspoon vanilla extract
  • 10 grams dark chocolate shavings or cocoa powder (optional, for garnish)

Directions

Step 1

Chop the dark chocolate into small pieces and place it in a heatproof bowl. Add the unsalted butter to the bowl.

Step 2

Set the bowl over a saucepan of simmering water (double boiler method) and gently melt the chocolate and butter together. Stir occasionally until smooth, then remove from the heat and let it cool slightly.

Step 3

Separate the egg yolks and whites into two clean bowls. Beat the egg yolks with the granulated sugar until the mixture becomes pale and thick. Stir the Kahlua and vanilla extract into the yolk mixture.
