  • 2 tablespoons Tamarind paste

  • 1 teaspoon Mustard seeds
  • 8 leaves Curry leaves
  • 2 small (sliced) Green chilies
  • 1 pinch Asafoetida (hing)
  • 0.5 teaspoon Ground turmeric
  • 0.25 cup Dry roasted peanuts
  • 1 teaspoon Salt
  • 2 tablespoons (chopped) Fresh coriander leaves

Directions

Step 1

Rinse the basmati rice thoroughly under cold water until the water runs clear, then soak it in water for 20 minutes.

Step 2

Cook the rice: In a medium saucepan, add 2 cups of water to the soaked rice and bring to a boil. Once boiling, reduce the heat to low, cover the pan, and simmer until the rice is cooked and water is absorbed, about 15 minutes. Remove from heat and let it cool slightly.

Step 3

In a small bowl, dilute the tamarind paste with 3 tablespoons of water. Set aside.

Heat the vegetable oil in a large pan over medium heat. Add the mustard seeds and let them splutter.
