Directions

Step 1

After roasting the chicken, carefully pour the drippings from the roasting pan into a measuring cup. Allow the fat to rise to the top and skim off 3 tablespoons of the fat. Set aside the fat and reserve the remaining drippings in the cup.

Step 2

Place the roasting pan on the stovetop over medium heat. Add the reserved 3 tablespoons of chicken fat back to the pan.

Stir in the all-purpose flour and whisk continuously for 2-3 minutes to form a roux. The mixture should turn golden brown and emit a nutty aroma.
