Ingredients

  • 2 cups All-purpose flour
  • 2 cups Granulated sugar
  • 0.75 cup Unsweetened cocoa powder
  • 2 teaspoons Baking powder
  • 1.5 teaspoons Baking soda
  • 1 teaspoon Salt
  • 2 large Eggs
  • 1 cup Whole milk
  • 0.5 cup Vegetable oil
  • 2 teaspoons Vanilla extract
  • 1 cup Boiling water
  • 0.5 cup Unsalted butter
  • 0.67 cup Unsweetened cocoa powder (for frosting)
  • 3 cups Powdered sugar
  • 0.33 cup Whole milk (for frosting)
  • 1 teaspoon Vanilla extract (for frosting)

Directions

Step 1

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans or line them with parchment paper.

Step 2

In a large mixing bowl, sift together the all-purpose flour, granulated sugar, 3/4 cup cocoa powder, baking powder, baking soda, and salt.

Step 3

Add the eggs, milk, vegetable oil, and vanilla extract to the dry ingredients. Mix until well combined.

Step 4

Slowly add the boiling water to the batter. Stir until smooth. The batter will be thin, but this is normal.

Step 5

Divide the batter evenly between the prepared cake pans. Bake for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

Step 6

Remove the cakes from the oven and allow them to cool in their pans for 10 minutes. Then, transfer the cakes to a wire rack to cool completely.

Step 7

To make the fudge frosting, melt the unsalted butter in a medium saucepan over low heat.

Step 8

Stir in the 2/3 cup cocoa powder until smooth. Remove from heat.

Step 9

Gradually add the powdered sugar and 1/3 cup milk, alternating between the two, until the frosting reaches a spreadable consistency.

Step 10

Stir in the vanilla extract.

Step 11

Once the cakes are fully cooled, place one layer onto a serving plate. Spread a thick layer of fudge frosting over the top.

Step 12

Add the second layer of cake on top and frost the top and sides evenly with the remaining fudge frosting.

Step 13

Serve immediately or store the cake in an airtight container at room temperature for up to three days.
