Ingredients

  • 12 oz Rotini pasta
  • 1.5 cups Cherry tomatoes, halved
  • 1 medium Cucumber, diced
  • 1 medium Red bell pepper, diced
  • 0.5 medium Red onion, finely diced
  • 0.75 cup Black olives, sliced
  • 0.75 cup Italian dressing
  • 0.5 cup Parmesan cheese, grated
  • 2 tbsp Fresh parsley, chopped
  • 0.5 tsp Salt
  • 0.25 tsp Black pepper

Directions

Step 1

Bring a large pot of salted water to a boil. Cook the rotini pasta according to the package instructions (usually about 8-10 minutes) until al dente.

Step 2

Drain the pasta and rinse it under cold water to stop the cooking process and cool it down. Set aside to drain completely.

Step 3

While the pasta cools, prepare the vegetables. Halve the cherry tomatoes, dice the cucumber and red bell pepper, and finely dice the red onion.
