  • 1 whole bay leaf
  • 1 teaspoon salt
  • 0.5 teaspoons black pepper
  • 2 cups baby spinach
  • 2 tablespoons fresh parsley, chopped
  • 0.25 cups grated Parmesan cheese (optional, for garnish)

Directions

Step 1

Heat the olive oil in a large pot over medium heat.

Add the diced onion, carrot, and celery. Sauté for 5-6 minutes, stirring occasionally, until the vegetables are softened.
