Ingredients

  • 1 lb boneless, skinless chicken thighs
  • 1 cup cornstarch
  • 0.5 cup all-purpose flour
  • 1 tsp salt
  • 0.5 tsp ground black pepper
  • 2 large eggs
  • 2 cups vegetable oil
  • 3 tbsp honey
  • 3 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 2 tbsp ketchup
  • 1 tsp sesame oil
  • 2 tbsp brown sugar
  • 2 cloves minced garlic
  • 1 tsp minced ginger
  • 0.25 cup water
  • 1 tbsp cornstarch (for sauce)
  • 2 cups broccoli florets
  • 1 cup sugar snap peas
  • 2 stalks green onions, thinly sliced
  • 2 tbsp toasted sesame seeds
  • 2 cups jasmine rice (optional, for serving)

Directions

Step 1

Prepare the chicken by cutting it into bite-sized pieces. Pat it dry with paper towels.

Step 2

In a mixing bowl, combine the cornstarch, flour, salt, and pepper. In another bowl, beat the eggs.

Step 3

Dredge each chicken piece in the flour mixture, then dip it in the beaten eggs, and coat again in the flour mixture. Set aside on a plate.

Step 4

Heat vegetable oil in a large skillet or wok over medium-high heat. Once hot, fry the chicken in batches, ensuring not to overcrowd the pan. Cook each piece for about 3-4 minutes per side, or until golden brown and fully cooked. Remove and drain on paper towels.

Step 5

In a small bowl, whisk together honey, soy sauce, rice vinegar, ketchup, sesame oil, brown sugar, garlic, ginger, water, and 1 tablespoon of cornstarch. Set aside.

Step 6

In a separate pan or the same skillet (wiped clean), heat a splash of oil over medium heat. Sauté the broccoli florets and sugar snap peas for about 3-4 minutes, or until tender but still vibrant green. Remove and set aside.

Step 7

Pour the sauce mixture into the pan and cook over medium heat, stirring constantly, until it thickens and becomes glossy (about 2-3 minutes).

Step 8

Add the fried chicken back to the pan and toss to coat it evenly with the sauce.

Step 9

Stir in the sautéed broccoli and sugar snap peas. Toss gently to combine.

Step 10

Transfer to a serving dish and garnish with sliced green onions and toasted sesame seeds.

Step 11

Serve over jasmine rice, if desired, and enjoy!
