Ingredients

  • 1 cup All-purpose flour
  • 1 cup Whole milk
  • 2 pieces Large eggs
  • 2 tablespoons Unsalted butter (melted)
  • 0.25 teaspoons Salt
  • 4 ounces Cream cheese (softened)
  • 0.5 cup Ricotta cheese
  • 2 tablespoons Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 tablespoons Vegetable oil (for frying)

Directions

Step 1

In a medium mixing bowl, whisk together the flour, milk, eggs, melted butter, and salt until smooth and lump-free to create the crepe batter. Let it rest for 10 minutes.

Step 2

While the batter is resting, prepare the filling. In a small bowl, mix together the cream cheese, ricotta cheese, sugar, and vanilla extract until well blended and creamy. Set aside.

Step 3

Heat a nonstick skillet or crepe pan over medium heat and lightly grease with a small amount of vegetable oil.

Step 4

Pour about 1/4 cup of batter into the pan, swirling it quickly to coat the bottom evenly. Cook for about 1-2 minutes, or until the edges begin to lift and the crepe looks set.

Step 5

Flip the crepe carefully and cook for an additional 30 seconds, then transfer to a plate. Repeat with the remaining batter, stacking the crepes as you go.

Step 6

To assemble the blintzes, place a crepe on a clean work surface. Add about 2 tablespoons of the cheese filling to the center, then fold the sides in and roll it up tightly, like a burrito. Repeat with all crepes and filling.

Step 7

In the same skillet, heat the remaining vegetable oil over medium heat. Place the filled blintzes seam-side down into the skillet. Fry for 1-2 minutes on each side, or until golden and crispy.

Step 8

Serve warm with your choice of toppings, such as sour cream, fruit preserves, or a dusting of powdered sugar.
