  • 3 sticks Cinnamon sticks
  • 6 pieces Whole allspice
  • 2 pieces Star anise
  • 1 pinch Nutmeg (freshly grated for garnish)
  • 1 whole Apple (sliced into rounds for garnish)
  • 1 whole Orange (sliced into rounds for garnish)
  • 1 cup Brandy (optional)

Directions

Step 1

In a large pot, combine the apple cider, orange juice, cranberry juice, and brown sugar. Stir the mixture over medium heat until the sugar is fully dissolved.

Step 2

Place the cloves, cinnamon sticks, allspice, and star anise into a piece of cheesecloth. Tie the cheesecloth securely with kitchen twine to create a spice bundle.

Step 3

Add the spice bundle to the pot and bring the mixture to a gentle boil over medium heat.

Step 4

Reduce the heat to low and let the wassail simmer for 20-25 minutes to allow the flavors to blend. Stir occasionally.

Step 5

Remove the spice bundle and discard it. If desired, stir in the brandy for a spiked version of the wassail.
