Ingredients

  • 400 g pasta (linguine or spaghetti)
  • 200 g brie cheese
  • 250 g cherry tomatoes
  • 2 tbsp extra virgin olive oil
  • 3 cloves garlic cloves
  • 10 leaves fresh basil leaves
  • 1 tsp salt
  • 0.5 tsp black pepper
  • 50 g grated Parmesan cheese (optional)

Directions

Step 1

Fill a large pot with water, add a generous pinch of salt, and bring it to a boil. Cook the pasta according to the package instructions until al dente. Reserve 1 cup of pasta cooking water and then drain the pasta.

Step 2

While the pasta is cooking, prepare the other ingredients. Cut the brie into small chunks, leaving the rind on for extra flavor, and set it aside. Halve the cherry tomatoes and finely chop the garlic cloves.

Step 3

In a large skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1-2 minutes until fragrant, being careful not to burn it.

Step 4

Add the halved cherry tomatoes to the skillet. Sprinkle with 1/2 teaspoon of salt and a pinch of black pepper. Cook for 5-7 minutes, stirring occasionally, until the tomatoes soften and release their juices.

Step 5

Lower the heat to medium-low and stir in the chunks of brie. Allow the cheese to melt gently, stirring occasionally. The mixture will become creamy and smooth.

Step 6

Toss the cooked pasta into the skillet with the brie sauce. Use tongs to mix well, ensuring the pasta is evenly coated. If the sauce is too thick, gradually add a few tablespoons of the reserved pasta cooking water until you reach your desired consistency.

Step 7

Taste and adjust the seasoning with additional salt and pepper, if needed.

Step 8

Remove the skillet from heat and stir in the fresh basil leaves. Sprinkle with grated Parmesan cheese, if desired, for an extra layer of flavor.

Step 9

Serve immediately and enjoy this decadent, cheesy pasta dish!
