Ingredients

  • 2 cups Rolled oats
  • 1 cup Almond butter
  • 0.5 cup Honey
  • 0.75 cup Vanilla protein powder
  • 2 tablespoons Chia seeds
  • 2 tablespoons Ground flaxseed
  • 0.25 cup Mini chocolate chips (optional)
  • 1 teaspoon Vanilla extract
  • 0.25 teaspoon Salt

Directions

Step 1

In a large mixing bowl, combine the rolled oats, vanilla protein powder, chia seeds, ground flaxseed, and salt. Stir until the dry ingredients are evenly distributed.

Step 2

In a microwave-safe bowl or small saucepan, gently warm the almond butter and honey until they are easy to mix together. Stir in the vanilla extract.

Step 3

Pour the almond butter and honey mixture over the dry ingredients. Mix thoroughly using a spatula or your hands until the mixture is fully combined and holds together.

Step 4

If desired, fold in the mini chocolate chips for a touch of sweetness.

Step 5

Line an 8x8-inch baking dish with parchment paper. Press the mixture firmly and evenly into the dish, using your hands or the back of a spatula to pack it tightly.

Step 6

Refrigerate for at least 1 hour, or until the mixture is firm and set.

Step 7

Once set, remove the mixture from the baking dish using the parchment paper as handles. Slice into 10 equal-sized bars.

Step 8

Store the bars in an airtight container in the refrigerator for up to 1 week or freeze them for up to 3 months for a grab-and-go snack.
