Ingredients

  • 0.5 cup Unsalted butter
  • 0.5 cup Creamy peanut butter
  • 0.5 cup Granulated sugar
  • 0.5 cup Light brown sugar, packed
  • 1 Large egg
  • 1 teaspoon Pure vanilla extract
  • 1.25 cups All-purpose flour
  • 0.5 teaspoon Baking soda
  • 0.25 teaspoon Salt
  • 0.25 cup Granulated sugar (for rolling)

Directions

Step 1

Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

Step 2

In a large bowl, beat the unsalted butter, creamy peanut butter, granulated sugar, and light brown sugar together until smooth and creamy, about 2-3 minutes.

Step 3

Add the egg and pure vanilla extract to the mixture, and beat until well combined.

Step 4

In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing just until a dough forms. Do not overmix.

Step 6

Scoop out tablespoons of dough and roll them into balls. Roll each ball in granulated sugar to coat.

Step 7

Place the sugar-coated dough balls on the prepared baking sheets, spacing them about 2 inches apart.

Step 8

Using the back of a fork, gently press down on each ball of dough to create a crisscross pattern.

Step 9

Bake the cookies in the preheated oven for 9-10 minutes, or until the edges are lightly golden. The cookies may look slightly underbaked in the center, which is fine as they will set as they cool.

Step 10

Remove the baking sheets from the oven and allow the cookies to cool on the sheets for 5 minutes before transferring them to a wire rack to cool completely.

Step 11

Serve and enjoy! Store leftovers in an airtight container at room temperature for up to a week.
