Ingredients

  • 400 g all-purpose flour
  • 2 tsp baking powder
  • 250 g unsalted butter, softened
  • 250 g granulated sugar
  • 4 eggs
  • 1 tsp vanilla extract
  • 1 tbsp orange zest
  • 120 ml fresh orange juice
  • 120 ml milk
  • 50 g powdered sugar
  • 1 optional coin (wrapped in foil)

Directions

Step 1

Preheat the oven to 180°C (350°F) and grease a 9-inch (23 cm) round cake pan. Line the bottom with parchment paper for easy removal.

Step 2

In a medium bowl, whisk together the all-purpose flour and baking powder. Set aside.

Step 3

In a large mixing bowl or stand mixer, cream the softened butter and granulated sugar together until light and fluffy, about 3-5 minutes.

Step 4

Add the eggs one at a time to the butter-sugar mixture, beating well after each addition. Then mix in the vanilla extract and orange zest.

Step 5

Gradually add the orange juice and milk to the mixture, alternating with the dry ingredients. Begin and end with the dry ingredients, mixing until just combined. Be careful not to overmix.

Step 6

If including a coin, wrap it tightly in foil and gently fold it into the batter.

Step 7

Pour the batter into the prepared cake pan, spreading it evenly with a spatula.

Step 8

Bake the Vasilopita in the preheated oven for 45-50 minutes, or until a toothpick inserted into the center comes out clean.

Step 9

Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.

Step 10

Once cool, dust the top of the cake with powdered sugar. Optionally, you can write the new year’s number on top with more powdered sugar or melted chocolate.

Step 11

Slice the cake and enjoy! Don’t forget to see who finds the coin for good luck in the coming year!
