Ingredients

  • 2 lbs Russet potatoes
  • 1 tsp Salt
  • 3 pieces Hard-boiled eggs
  • 2 stalks Celery
  • 0.5 cup Red onion
  • 0.5 cup Pickles (diced)
  • 0.75 cup Mayonnaise
  • 1 tbsp Yellow mustard
  • 1 tsp Apple cider vinegar
  • 0.25 tsp Ground black pepper
  • 0.25 tsp Paprika (for garnish)
  • 1 tbsp Fresh parsley (chopped, optional)

Directions

Step 1

Peel and dice the potatoes into bite-sized chunks.

Step 2

Bring a large pot of water to a boil. Add the diced potatoes and 1 teaspoon of salt, then simmer for 15-20 minutes or until the potatoes are fork-tender. Drain and set aside to cool.

Step 3

While the potatoes are cooling, dice the celery, red onion, and pickles, and set them aside.

Step 4

Peel the hard-boiled eggs and dice them into small pieces.

Step 5

In a large mixing bowl, combine the mayonnaise, yellow mustard, apple cider vinegar, black pepper, and 1/2 teaspoon of salt. Mix well to create the dressing.
