Ingredients

  • 2 whole Ripe papaya
  • 1 cup Kimchi
  • 200 grams Shrimp (peeled and deveined)
  • 200 grams Scallops
  • 2 tablespoons Sesame oil
  • 1 tablespoon Soy sauce
  • 1 tablespoon Gochujang (Korean chili paste)
  • 2 cloves Garlic (minced)
  • 2 stalks Green onions (sliced thinly)
  • 2 tablespoons Cilantro (chopped)
  • 1 whole Lime (juiced)
  • 2 cups Cooked white rice
  • 1 tablespoon Seaweed flakes (optional)
  • 1 teaspoon Sesame seeds (toasted)

Directions

Step 1

Slice the ripe papayas in half lengthwise and scoop out the seeds to create four hollow 'bowls'. Set aside.

Step 2

In a large skillet, heat the sesame oil over medium-high heat.

Step 3

Add the minced garlic and sauté for 30 seconds until fragrant.

Step 4

Add the shrimp and scallops to the skillet and cook for 3-4 minutes, flipping halfway, until they are opaque and fully cooked. Remove from the skillet and set aside.

Step 5

Reduce the heat to medium and add the kimchi, soy sauce, gochujang, and lime juice to the skillet. Stir well and cook for 2 minutes to combine the flavors.

Step 6

Gently stir the cooked shrimp and scallops back into the skillet, ensuring they are coated in the kimchi mixture. Cook for an additional minute and remove from heat.

Step 7

To assemble the bowls, place a scoop of cooked white rice at the bottom of each papaya half.

Step 8

Spoon the kimchi seafood mixture over the rice, dividing it equally between the four papaya halves.

Step 9

Garnish each bowl with sliced green onions, chopped cilantro, toasted sesame seeds, and optional seaweed flakes for added texture and flavor.

Step 10

Serve immediately and enjoy the burst of flavors and textures in this tropical-fusion dish!
