Ingredients

  • 4 cups Fresh mixed berries (blueberries, raspberries, and blackberries)
  • 0.75 cups Granulated sugar
  • 2 tablespoons Cornstarch
  • 2 tablespoons Lemon juice
  • 1.25 cups All-purpose flour
  • 1.5 teaspoons Baking powder
  • 0.25 teaspoons Salt
  • 6 tablespoons Unsalted butter (cold, cut into small cubes)
  • 0.33 cups Whole milk
  • 1 teaspoons Vanilla extract

Directions

Step 1

Preheat your oven to 375°F (190°C). Grease a 9-inch baking dish and set aside.

Step 2

In a large mixing bowl, combine the mixed berries, 0.5 cups of granulated sugar, cornstarch, and lemon juice. Toss gently until the berries are evenly coated. Pour the berry mixture into the prepared baking dish and spread it out evenly.

Step 3

In a separate bowl, mix the flour, baking powder, 0.25 cups of sugar, and salt. Whisk to combine.

Step 4

Using a pastry cutter or your fingers, cut the cold butter into the flour mixture until it resembles coarse crumbs.

Step 5

In a small bowl, whisk together the milk and vanilla extract. Gradually add the milk mixture to the dry ingredients, stirring until a soft dough forms. Be careful not to overmix.

Step 6

Drop spoonfuls of the dough over the berry mixture, leaving some gaps for the berries to peek through.

Step 7

Place the cobbler in the preheated oven and bake for 35–40 minutes, or until the topping is golden brown and the berries are bubbling.

Step 8

Remove from the oven and let the cobbler cool for at least 10 minutes before serving. Enjoy warm with a scoop of vanilla ice cream or a dollop of whipped cream, if desired.
