Ingredients

  • 2 cups Heavy cream
  • 0.5 cups Whole milk
  • 4 oz Dark chocolate (70% cacao), finely chopped
  • 2 tsp Espresso powder
  • 6 large Egg yolks
  • 0.5 cups Granulated sugar
  • 1 tsp Vanilla extract
  • 0.25 tsp Salt
  • 0.5 cups Granulated sugar (for topping)

Directions

Step 1

Preheat your oven to 325°F (160°C). Place a large baking dish or roasting pan on the counter and set aside six 6-ounce ramekins inside the pan.

Step 2

In a medium saucepan over low heat, combine the heavy cream and whole milk. Slowly bring the mixture to a simmer, stirring occasionally, but do not let it boil.

Step 3

Remove the saucepan from the heat and whisk in the chopped dark chocolate and espresso powder. Stir until the chocolate is completely melted and the mixture is smooth. Set aside to cool slightly.

Step 4

In a medium bowl, whisk together the egg yolks, granulated sugar, vanilla extract, and salt until the mixture is pale and slightly thickened.

Step 5

Slowly pour the warm chocolate mixture into the egg yolk mixture, whisking continuously to prevent the eggs from cooking. Strain the custard through a fine-mesh sieve into a large pouring vessel to remove any lumps.

Evenly divide the custard among the ramekins. Carefully pour hot water into the baking dish, around the ramekins, until it reaches halfway up their sides to create a water bath.

Place the baking dish in the preheated oven and bake for 35-40 minutes, or until the custards are just set around the edges but still slightly jiggly in the center.

Remove the baking dish from the oven and let the ramekins cool in the water bath for 15-20 minutes. Then transfer the ramekins to a wire rack to cool completely before refrigerating for at least 4 hours or overnight.

Step 9

Before serving, sprinkle about 2 teaspoons of granulated sugar evenly over the top of each custard. Use a kitchen torch to caramelize the sugar until it is golden and crisp. Alternatively, place the ramekins under a broiler for a few minutes, watching closely to avoid burning.
