Ingredients

  • 2 tablespoons olive oil
  • 1 pound mild or hot Italian sausage, casings removed
  • 4 garlic cloves, minced
  • 0.5 teaspoons crushed red pepper flakes (optional)
  • 1 large head escarole, roughly chopped
  • 2 15-ounce cans canned cannellini beans, drained and rinsed
  • 1.5 cups chicken broth
  • 0.5 teaspoons salt
  • 0.25 teaspoons black pepper
  • 0.5 cups grated Parmesan cheese, for serving (optional)
  • 1 loaf crusty bread, for serving (optional)

Directions

Step 1

Heat the olive oil in a large skillet or Dutch oven over medium heat.

Step 2

Add the Italian sausage to the skillet. Break it into smaller pieces with a wooden spoon as it cooks, stirring occasionally, until browned and cooked through, about 7-8 minutes. Remove the sausage with a slotted spoon and set aside.

Step 3

In the same skillet, add the minced garlic and crushed red pepper flakes (if using). Cook for 1 minute until fragrant, being careful not to burn the garlic.

Step 4

Add the chopped escarole to the skillet a handful at a time, stirring gently to wilt it down. Cook for 3-4 minutes until the escarole is tender and reduced in volume.

Step 5

Return the cooked sausage to the skillet, then add the cannellini beans and chicken broth. Stir to combine all the ingredients.

Step 6

Season the mixture with salt and black pepper. Simmer over medium-low heat for 5-7 minutes, allowing the flavors to meld and the beans to heat through.

Step 7

Remove from the heat and taste for seasoning, adjusting salt and pepper if needed.

Step 8

Serve hot, topped with grated Parmesan cheese if desired. Offer crusty bread on the side for dipping into the flavorful broth.
