Ingredients

  • 3 tablespoons Butter
  • 1 tablespoon Olive oil
  • 1 medium Yellow onion, diced
  • 3 medium Carrots, peeled and diced
  • 3 medium Celery stalks, diced
  • 3 cloves Garlic cloves, minced
  • 1 cup Wild rice
  • 8 cups Chicken or vegetable broth
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried rosemary
  • 1 Bay leaf
  • 1 teaspoon Salt
  • 0.5 teaspoon Ground black pepper
  • 0.25 cup All-purpose flour
  • 2 cups Milk
  • 1 cup Heavy cream
  • 1.5 cups Shredded cooked chicken (optional)
  • 2 tablespoons Fresh parsley, chopped (optional, for garnish)

Directions

Step 1

In a large pot or Dutch oven, heat the butter and olive oil over medium heat until melted and shimmering.

Step 2

Add the diced onion, carrots, and celery to the pot. Sauté for 5-7 minutes, stirring occasionally, until the vegetables are tender and the onion is translucent.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Add the wild rice to the pot, along with the chicken or vegetable broth, dried thyme, dried rosemary, bay leaf, salt, and black pepper. Stir well to combine.

Step 5

Bring the mixture to a gentle boil, then reduce the heat to low. Cover and simmer for 45-50 minutes, or until the wild rice is tender and cooked through, stirring occasionally.

Step 6

In a separate small saucepan, melt 3 tablespoons of butter over medium heat. Whisk in the flour and cook for 1-2 minutes, stirring constantly, to create a roux.

Step 7

Gradually whisk in the milk until the mixture is smooth. Cook for 3-4 minutes, stirring frequently, until the mixture thickens slightly.

Step 8

Pour the milk mixture into the soup pot, stirring to combine. Add the heavy cream and cooked chicken (if using) to the pot and stir well.

Step 9

Simmer the soup for an additional 5-10 minutes, allowing the flavors to meld and the soup to thicken slightly. Adjust seasoning with additional salt and pepper, if needed.

Step 10

Remove the bay leaf and discard. Serve the soup hot, garnished with fresh parsley if desired. Enjoy!
