Ingredients

  • 0.5 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 0.5 cup brown sugar, packed
  • 1 cup pumpkin puree
  • 1 large egg
  • 2 teaspoons vanilla extract
  • 2.25 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon salt
  • 1.5 cups semi-sweet chocolate chips

Directions

Step 1

Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper or silicone baking mats.

Step 2

In a large mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.

Step 3

Add the pumpkin puree, egg, and vanilla extract to the creamed mixture. Mix until well combined.

Step 4

In a separate medium bowl, whisk together the all-purpose flour, baking powder, baking soda, ground cinnamon, ground nutmeg, and salt.

Step 5

Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just incorporated. Be careful not to overmix.

Step 6

Fold in the semi-sweet chocolate chips using a spatula.

Step 7

Drop tablespoon-sized scoops of dough onto the prepared baking sheets, leaving about 2 inches of space between each cookie.

Step 8

Bake in the preheated oven for 12-15 minutes, or until the edges are lightly golden but the centers remain soft.

Step 9

Remove the cookies from the oven and let them cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Step 10

Store the cookies in an airtight container at room temperature for up to 5 days, or freeze for longer storage.
