Ingredients

  • 2 tablespoons olive oil
  • 1 medium yellow onion, diced
  • 4 garlic cloves, minced
  • 2 pounds ground beef (85% lean)
  • 28 ounces canned diced tomatoes
  • 3 tablespoons tomato paste
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 0.5 teaspoon cayenne pepper (optional)
  • 15 ounces canned kidney beans, drained and rinsed
  • 15 ounces canned black beans, drained and rinsed
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper
  • 2 tablespoons fresh cilantro, chopped (for garnish)
  • 1 cup shredded cheddar cheese (optional, for serving)
  • 0.5 cup sour cream (optional, for serving)

Directions

Step 1

In a large pot or Dutch oven, heat the olive oil over medium heat.

Step 2

Add the diced onion and cook, stirring frequently, until softened and translucent, about 5 minutes.

Step 3

Stir in the minced garlic and cook for an additional 1 minute, until fragrant.

Step 4

Add the ground beef to the pot and cook, breaking it up with a wooden spoon, until browned and fully cooked, about 7-10 minutes. Drain any excess fat if necessary.

Step 5

Stir in the canned diced tomatoes, tomato paste, and beef broth.

Step 6

Add the chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Stir well to combine.

Step 7

Bring the mixture to a simmer, then reduce the heat to low. Cover and let it cook for 20 minutes, stirring occasionally.

Step 8

After 20 minutes, stir in the kidney beans and black beans. Cook for an additional 15 minutes, uncovered, allowing the flavors to meld and the chili to thicken.

Step 9

Taste and adjust seasoning if necessary.

Step 10

Serve the chili hot, garnished with chopped fresh cilantro, shredded cheddar cheese, and a dollop of sour cream, if desired.
