Ingredients

  • 1 medium head Green cabbage
  • 2 large Carrots
  • 4 stalks Green onions
  • 0.25 cup, chopped Fresh parsley
  • 0.25 cup Apple cider vinegar
  • 0.25 cup Olive oil
  • 1 tablespoon Honey
  • 1 teaspoon Dijon mustard
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper

Directions

Step 1

Remove the outer leaves from the cabbage, then cut it in half and remove the core. Finely shred the cabbage using a sharp knife or a mandoline slicer. Transfer the shredded cabbage to a large mixing bowl.

Step 2

Peel the carrots and grate them using a box grater or a food processor. Add the grated carrots to the mixing bowl with the cabbage.

Trim the ends of the green onions and finely chop them. Add the chopped green onions and parsley to the bowl.
